Put a pot of water on to boil for noodles
Add oil to pan and brown italian sausage (about 5 minutes)
Add onions, cook an additional 3-5 minutes, or until translucent.
Add garlic, roasted red peppers, italian seasoning, red pepper flakes, salt/pepper, cumin, and bay leaves. Cook for an additional 2 minutes.
Add broth and tomato sauce. Bring to a boil, and then let simmer.
Add basil and spinach, simmer. salt and pepper to taste.
Cook noodles per package instructions. If using lasagna noodles, break into smaller chunks before cooking.
Mix cheesy mixture together, if using cream cheese, whip the cream cheese in a mixer to create a fluffier texture.
To assemble soup, add a scoop of noodles to bowl, fill with soup and then top with a tablespoon or two or cheesy mixture and sprinkle with mozzarella cheese.
