Easy, Cheesy, Lasagna Soup

This simple recipe is a fresh way to enjoy the flavors of one of the ultimate comfort food meals. Taking all the great flavors of lasagna, and putting it into a warm, cozy, soup!

  • 1 Box Noodles Lasagna, penne, homemade, or any kind!
  • 1 Lb Italian sausage browned
  • 2 Tsp Olive or avocado oil
  • 1 Medium Onion
  • 6 Cloves Garlic minced
  • 1/2 Cup Roasted red peppers chopped
  • 2 Tbsp Italian seasoning
  • 1/2 Tsp Crushed red pepper flakes
  • 1/2 Tsp Cumin ground
  • 2 Bay leaves
  • Salt/pepper to taste
  • 1 Quart Tomato sauce
  • 6 Cups Chicken or turkey broth
  • 1/4 Cup Basil fresh, or fresh frozen
  • 1/2 Cup Fresh or frozen spinach Chopped

Cheesy Goodness

  • 2 Cups Mozzarella grated
  • 8 Oz Cream cheese or ricotta
  • 3/4 Cup Parmesan cheese grated
  • Salt/pepper to taste


  • Put a pot of water on to boil for noodles
  • Add oil to pan and brown italian sausage (about 5 minutes)
  • Add onions, cook an additional 3-5 minutes, or until translucent.
  • Add garlic, roasted red peppers, italian seasoning, red pepper flakes, salt/pepper, cumin, and bay leaves. Cook for an additional 2 minutes.
  • Add broth and tomato sauce. Bring to a boil, and then let simmer.
  • Add basil and spinach, simmer. salt and pepper to taste.
  • Cook noodles per package instructions. If using lasagna noodles, break into smaller chunks before cooking.
  • Mix cheesy mixture together, if using cream cheese, whip the cream cheese in a mixer to create a fluffier texture.
  • To assemble soup, add a scoop of noodles to bowl, fill with soup and then top with a tablespoon or two or cheesy mixture and sprinkle with mozzarella cheese.
  • Enjoy with your favorite crusty bread or rolls!


  • Try making my fast and easy Homemade Egg Noodles to add, just roll them a bit thinner and wider for more of a lasagna noodle texture! Add directly to the soup and cook in soup liquid as directed in my recipe. They last much longer in soup and do not get mushy the next day!
  • If you prefer cheddar cheese to mozzarella, use grated cheddar on the top of your soup
  • If you don't have italian sausage, just use any ground meat you have! We have a lot of game meat, so I often substitute recipes with ground venison or elk that we have. I prefer ground meat in my lasagna, but honestly, you could use this with any type of meat you have, even chopped up chicken if you don't want to make an extra trip to the store!
